Easy Jam

1 lb fruit (smashed or finely chopped)
1 tsp lemon
2 cups sugar (white)
1 tsp butter

In a large saucepan add butter, let melt. Add fruit, lemon and sugar and stir. Let stay on stove for 4-6 minutes (high heat), **DO NOT LET BROWN**. Take off heat and put in jar. Let cool before putting in fridge.

*If sugar dries in pan, put baking soda (1 tbs) in pan and pour water (1 1/2 cups) over. Let simmer for 15-20 minutes and pour liquid out.
